Quick update:
I have found that the best way is to sift the coffee on the day of collection, breaking up all the pucks and lumps before freezing.
keep bag sizes down as you have recomended, though in my case im keeping them to around 3 kg to help defrost quicker.
the frozen exhibits brown liquid in the bag, but from previous posts this shouldn’t be a problem.

I am moving them onto fruiting in a few days so I will keep this post updated.
